This is much too broad a question to be answered on the forum, but as already stated, you need to prepare to be cut, because a REALLY GOOD knife fighter WILL cut you regardless of what attempt you make to stop him! Notice that I said a REALLY GOOD knife fighter. Most that you would encounter are probably not that good, but you don't know that until the encounter begins! I have had a few knife encounters in my life and I was cut on three different occasions. Take the psychological barriers out of the way by KNOWING that you are probably going to be cut, then focus on TOTAL DESTRUCTION of the opponent in front of you! You KNOW that this person could end your life, so your immediate concern is to DESTROY THEM with whatever means you have at your disposal! One advantage that you have is that most of the time in a weapons encounter, the opponent tends to forget about everything (all of their natural body weapons) but that weapon that they have in their hand. Therefore, it is everything that you have against that one tool. This simplifies things greatly for you, and enables you to focus more on NOT being cut. The best thing to do is to just go in there thinking, I WILL PROBABLY BE CUT, then go to work and methodically apply your tools and take them out! Other than that ... RUN!!!!!
