If it's a open pan fire, use baking soda, or a lid on the pan. A lid smothers the flame. If anyone who is in the FF biz would like to add to this, be my guest.
Baking soda, of course, is the same kind of stuff found in some fire extinguishers. NEVER EVER USE WATER.
