Clutch and rear main time

So it has come time for the clutch to be replaced in our 66 F'lane GT. it has been slipping for some time and now its to the point its barely driveable.

so we have decided to run a Hays Street/Strip clutch, thier flywheel (if needed) and the rear main needs to be replaced.

can the rear main be done with the engine in the car?
do we need to drop the oil pan?
what is the best rear main seal to use?
is the hays Street/strip clutch a good choice?
