So I just moved here....and um I'm really missing all the veg places I used to frequent in Seattle. The two here in Denver are big $$$. So I've been cooking and baking alot. Last night I made lemon-blueberry muffins....nummy!
2c Flour
1 1/2t Baking Soda
1/2t Salt
rind from two lemons
1/3c oil
1c soy milk
3/4-1c sugar (no bone charr!)
1T lemon extract
1-1 1/2c blueberries
Mix dry, then wet. Fold berries in last. Bake for about 18 mins. I'm still getting used to baking with the elevation. I have learned to bake on a different rack in the oven. Let me know how yours turn out. |
